At least 3 days means 3, 4, or 5 days.
You can add up the probabilities for 3 days, 4 days, and 5 days, or you can add up the probabilities for 0 days, 1 day, and 2 days and subtract the sum from 1. Pretty much the same amount of work either way.
Becase the question is asking for P(x>=3) which is the same as P(X=3) + P(X=4) + P(X=5). 1 - 5C3 as suggested by you would give you the probabilitiy for all outcomes except x=3, meaning P(X=1) + P(X=2) + P(X=4) + P(X=5), which is different from what is asked.
