With butterflies and condors I’ve noticed for the 2 year, 5 year and so forth that they always mention it as a 2s, 5s, 10s etc.
Why is that? What does that “s” represent?

No, they don’t.
They always mention them as 2s, 5s, 10s, etc.
They’re plurals: twos (2-year Treasuries), fives (5-year Treasuries), tens (10-year Treasuries).
